Probably my favorite linguistic phenomenon is global goose-fronting.

Basically the articulation of the vowel in "goose" (and its appearance in other words) is moving forward in the vocal tract. And it's doing it in many varieties of English.
Not very interesting (except for that last line), but what a fuckin' name
